This week’s loaf is a Light Spelt, blending organic stoneground wholegrain spelt flour from Wholegrain Milling, condo high extraction stoneground wheat, with certified organic bakers white wheat flour from Wholegrain Milling. Spelt is an ancient wheat, low in gluten and easy to digest, with sweet and nutty flavours.
